Edamame Corn and Black Bean Salad

This Edamame Corn and Black Bean Salad is a super flavorful, easy way to enjoy highly nutritious soy.

Ingredients

1 can black beans, drained and rinsed
1 cup thawed and shelled edamame
1 cup frozen corn, thawed
1 cup cherry tomatoes, quartered
1/2 bell pepper, diced
4 green onions, chopped
2 tablespoons chives, chopped
1 tablespoon extra virgin olive oil
2 tablespoons lime juice
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon smoked paprika

Directions

Combine all ingredients in a large bowl and stir.
Mix until combined and adjust the seasoning to taste.
Serve on its own as a salad or cold with tortilla chips.

Other Helpful Tips

You can make this recipe up to two days ahead. The flavors end up mixing together and getting stronger.
You can use any kind of tomato, but using smaller tomatoes usually means less chopping.
I recommend using pre-shelled edamame to help save on time.
